Main Ingredients

  • 1 cup grated zucchini
  • 2 cups rolled oats
  • 1/2 cup mashed bananas or applesauce Use either banana or applesauce.
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup honey or maple syrup Optional, for sweetness.
  • 1/2 cup raisins or chocolate chips Optional, for additional flavor.
  • 1/4 tsp salt
  • 1/2 tsp baking powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the grated zucchini, rolled oats, mashed bananas or applesauce, vanilla extract, cinnamon, salt, and baking powder.
  • If using, add honey or maple syrup to the mixture.

Mixing and Baking

  • Stir all ingredients together until well combined.
  • Fold in raisins or chocolate chips if desired.
  • Using a tablespoon or a cookie scoop, drop dollops of the mixture onto your prepared baking sheet.
  • Shape the cookies before baking as they don't spread much.
  • Bake for about 15-20 minutes, or until the edges turn golden brown.
  • Let the cookies cool on the tray for a few minutes before transferring them to a wire rack.

Notes

These cookies freeze well; store in an airtight container between layers of parchment paper. You can add nuts, seeds, or dried fruits for variations.
